Grape variety: 100% grechetto di Todi – G5 clone, from sustainable farming
Vineyards specifications: single vineyard planted in 1990 with guyot training system, north-east exposure, white clay, limestone and chalky soils
Plant density and yield: 6.500 plants/hectare with a production of 1,25 kg of grapes per plant (80 quintals/hectare)
Harvest: totally hand-picked in the second week of September
Winemaking: the grapes are gently destemmed and pressed, the must naturally decants for 12/24 hours and the fermentation takes place with wild yeast in stainless steel tank and amphoras, where temperatures are strictly controlled
Ageing: 12 months in amphoras and neutral large barrels of Slavonian oak in contact with the fine lees, it doesn’t go through the malolactic fermentation and, after being bottled, it refines at the least 6 months in the bottle
Color: straw-yellow wine with golden shading
Aromas: pineapple, golden apple, yellow flowers with very delicate sweet spice notes
Taste: enveloping, fresh and savory, supported by minerality and creamy texture, it is a wine of great elegance and complexity that will give its best 3/4 years after the harvest
